Definitely a treat, but one of my favorites, this almond bundt cake is awesome.


  • • 1/2 cup ground almonds
  • • 1/2 cup applesauce
  • • 1/2 cup unsalted butter
  • • 1-2/3 cups cane sugar
  • • 4 eggs
  • • 2 tsp pure almond extract
  • • 1-1/2 tsp pure vanilla extract
  • • 1-1/2 cups whole wheat flour
  • • 1 cup white-wheat flour
  • • 2 tsp aluminum-free baking powder
  • • 1/2 tsp salt
  • • 1 cup milk


  1. Preheat the oven to 350° F.  Grease a bundt pan well and then generously shake flour onto it and shake the excess flour off.
  2. Place 1/2 cup almonds into a food processor and grind up well. Mix the ground almonds in a medium-sized bowl, along with flour, baking powder, and salt.  Set aside.
  3. In a large bowl, cream together the applesauce, butter, and sugar until the mixture is light and fluffy.  Add the eggs one at a time, followed by the almond and vanilla extracts.  Beat in the flour mixture alternately with 1 cup of milk and mix until combined well.  Don’t overmix.
  4. Pour the batter into the prepared bundt pan.  Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.  I always set the timer for a shorter time and then check on it frequently during the last 10 minutes or so.  Cool inverted for 10 minutes.
