Acorn Squash

 

 

 

 

 

Also known as Danish squash, this wonderful autumn-friendly vegetable is delicious roasted and spiced up with cinnamon and a little brown sugar.  Pair it with a lean protein, as well as soup or a colorful salad with pomegranates, and you have a beautiful autumn meal.

Ingredients:

  • •  Acorn squash
  • •  2 tsp butter
  • •  Nutmeg, to taste
  • •  Cinnamon, to taste
  • •  Brown sugar, to taste

Directions:

  1. Cut a firm acorn squash in half and remove the seeds from it. Microwave the halves on high for 5 minutes.
  2. Rub about 1 tsp of butter on the flesh of each halve and then lightly sprinkle nutmeg, cinnamon and a pinch of brown sugar onto each halve.
  3. Bake at 350 degrees F for about 20 minutes or until roasted to your liking.
