Breakfast is a big deal at our house.  I think it’s important to sit down and start the day off right with a nutritious breakfast, and I believe that a healthy breakfast makes a big difference when it comes to making smart choices throughout the day.  Try out one of my favorite breakfast recipes and keep that positive momentum rolling forward all day long.

Ingredients:

  • •  2 apples, cored and diced
  • •  2 cups low-fat milk
  • •  2 cups water
  • •  1 cup steel-cut oats
  • •  2 Tbsp brown sugar
  • •  1/2 tsp cinnamon
  • •  1/8 tsp nutmeg
  • •  Optional: 2 tsp ground flax seed or chia seeds
  • •  Optional: 1 Tbsp butter
  • •  Optional: 1/4 tsp finely ground sea salt

Directions:

  1. Spray a slow-cooker with cooking spray.  Add all ingredients to the slow cooker, stir, and cover.
  2. Cook on low for 8 hours or for 4 hours on high.
  3. Serve with chopped nuts, Greek yogurt, or fresh fruit.
